Weekly Menu 3/9

Monday:


I had a ladies night out last night so the kids stayed home with daddy and had fish sticks and pizza rolls :(~


Tuesday:


Shephard's Pie

Ground meat, Peas, Corn, Mashed Potatoes, Shredded Cheddar Cheese

Brown meat, drain, pt int bottom of casserole dish. Layer with cooked mashed potatoes, corn and peas as you desire. Top with cheese, put in oven until cheese melts

Wednesday:


Rabbit Sauce Piquant

This may gross out some people but going along with our frugal living, we like to "live off the land" as much as possible. We raise rabbits, chickens, and occasionally have deer available to us.

This recipe is for rabbit that I already had in the freezer. You can do this same recipe with chicken.

Season rabbit with salt, pepper, and red pepper. Fry covered in oil for 30 minutes or until tender. Set aside. Saute onions, celery, green pepper inpan drippings until onions are tender. Add tomatoes and tomato juice and 5 cups water. Cook until desired thickness. Add rabbit, mushrooms, sugar and garlic. Cook for 20 more minutes. Sprinkle with onion tops and parsley. Serve over rice.

Thursday:


Turkey and Gravy with Rice

We bought several turkeys from Kroger around Thanksgiving for .05 per pound and we still have one left so we will be starting this one this week.

I will season the turkey inside and out and coat it with butter. Then bake the turkey in the oven all day long on low heat. When I return I will pour out the drippings into a pot and make some gravy from it.

I will have corn for a side dish and serve the turkey with the rice and gravy

Friday:

Sunday:


Turkey Tetrazini

leftover pulled turkey, spahetti noodles, pimento, cream of mush soup, mush pieces, shredded chedder cheese

Cook noodles in either chicken or turkey broth. Mix all ingredients including turkey, leave out cheese. Stir everything together, put in casserole dish, sprinkle with cheese

I will cook the noodles before church and of course the turkey is already cooked so when I come home from church, all I have to do is mix everything together and cook for a few minutes in the oven to heat.



For dinner we will snack or have leftovers.
